One-Pot Beef Stroganoff with Rigatoni Noodles:
Ingredients:
• 1 lb ground beef
• 1 tablespoon Better than Beef Bouillon
• 4-5 cups water (or beef broth if available)
• 8 oz uncooked rigatoni noodles
• 1 cup sour cream (or cream cheese/yogurt)
• 1 tablespoon flour (optional for thickening)
• Salt and pepper to taste
• 1 tablespoon oil or butter (for sautéing)
• Optional: onion, garlic, and parsley, thyme (if you have them)
Instructions:
1. Cook the beef: Heat oil or butter in a large pot over medium heat. Add the ground beef, breaking it up as it browns. If you have onions or garlic, add them in now and sauté until soft.
2. Add bouillon and water: Once the beef is browned, stir in the Better than Beef Bouillon and 2-3 cups of water. Bring it to a simmer. If you want extra flavor, use beef broth instead of water.
3. Add the noodles: Add the uncooked rigatoni noodles directly to the beef and broth mixture. Stir to make sure the noodles are submerged. Reduce the heat to medium-low, cover, and cook for about 10-12 minutes, stirring occasionally, until the noodles are tender.
4. Thicken the sauce (optional): If you want a thicker sauce, sprinkle in the flour and stir well. Let it cook for 1-2 minutes to thicken the sauce.
5. Add sour cream: Once the noodles are cooked and the sauce has thickened, lower the heat and stir in the sour cream (or cream cheese/yogurt). Mix until smooth and creamy.
6. Season and serve: Taste the stroganoff and adjust the seasoning with salt and pepper. Garnish with parsley if available.
You’ll have a creamy one-pot beef stroganoff with noodles cooked right in the sauce!
